Vinification
After soft crushing, the grapes are left to macerate on the skins for 8-10 hours at a temperature of 10° C. Fermentation at a controlled temperature continues for 15 days, during which the must undergoes frequent remontages to favour extraction of polyphenols and colouring substances. After fermentation and partial racking, the wine is transferred to steel tanks where malolactic fermentation takes place. The wine is then finished in barriques for about 8 months.

Tasting Notes
This is a wine to be explored, in which one finds a myriad facets and unexpected depth that reveals itself first of all in aromas of plums and currants, evolves with spicy notes and concludes with a slightly balsamic finish. On the palate it is warm, intense and concentrated just like the grapes after appassimento. Tannins give a soft and velvety sensation.

Food pairings
It pairs well with the savoury pasta dishes, red meats and mature cheeses. Serve at 16-18° C.

COMEME
The name derives from the acronym of the vines from which it is made, Co (as in Corvina) Me (Merlot) Me (Merlot). It is a blend of Corvina from the San Felice vineyard (110 meters a.s.l.), Merlot from Central Valpantena (200 meters a.s.l.) and Merlot from Illasi (500 meters a.s.l.).
